Katherine is washed in a local Somerset Cider Brandy, which helps develop flavour and also attain a certain consistency, which is smooth and close in texture. The firm texture has a pleasing bounce. The cheese uses a traditional animal rennet which increases it’s depth of flavour.
Would be lovely as an accompaniment to any of our cheeseboards or as a gift.
