Saucisson: Inspired by the classic saucissons from southwest France, this mould-ripened pork saucisson sec is seasoned with black pepper, nutmeg and garlic, which gives it a full, broth-like flavour and succulent texture.

Pomona salami: A new salami inspired by Westcombe’s Somerset surroundings, using a lightly smoked pork and veal blend, and studded with Pomona cider brandy liqueur by Somerset Cider Brandy Co. The salami is steeped in green peppercorns, and flavoured gently with marjoram.
