We beleve lactic cheeses are truly fantastic. This collection has collected so many awards over the years it is difficult to list them all. They are made by some of the most talented cheesemakers in the country. Another lovely new mum treat as well as cheese board for the soft cheese fans.
Pave Cobble
Made by Whitelake, this creamy, sheep’s milk cheese has a beautiful ash covered, geotrichum rind. There are nutty, rich and creamy flavours, with a subtle peppery undertone. The paste becomes meltingly creamy with age.
Made with unpasteurised milk and vegetarian rennet.
Brightwell Ash
Made by Fraser Norton and Rachel Yarrow, this cheese won best goats cheese in the recent Artisan Cheese Awards 2022 in Melton Mowbray. Their milking herd are pedigree Anglo Nubian goats. It is aged for 21 days at the farm and we like to sell it as fresh as possible. It has a creamy yet light paste that has a mellow tang.
St Cera
St Cera is a delicious wash rind cheese made by Julie Cheyney at White Wood Dairy. Rich and luscious with a soft buttery notes and a wonderful longevity of flavour, a perfect addition to any cheese board. When ripe, this cheese is wonderfully spoonable, when a little younger, expect a pleasing dense paste. Julie washes the St Cera two to three times a week for approximately an month with a brine solution, as typical with this style of cheese.
