St Cera is a delicious wash rind cheese made by Julie Cheyney at White Wood Dairy. Rich and luscious with a soft buttery notes and a wonderful longevity of flavour, a perfect addition to any cheese board. When ripe, this cheese is wonderfully spoonable, when a little younger, expect a pleasing dense paste. Julie washes the St Cera two to three times a week for approximately an month with a brine solution, as typical with this style of cheese.
