Made by the wonderful White Lake Dairy, the Rachel Reserva is a truly fantastic cheese. A balanced acidity with a refreshing zing and crunch. Wonderfully herbaceous with developed citric notes followed by a subtle savory nuttiness. We sometimes recommended this cheese if you are looking for a goat pecorino style, but with less peppery notes. Perfect on a cheese board if you are in search of that zesty, crunchy number or I use it a lot in cooking, it’s fantastic on top of pasta. Made using a local unpasteurised (thermised) goat milk and a vegetarian rennet. Brine washed.
